开心果改变甜点版图

从配角跃升为甜品主角,开心果掀起一场风味与创意的新浪潮。

近年来,开心果凭借其营养优势与网络热度的双重推动,已成为广受欢迎的健康潮食。它不仅富含不饱和脂肪酸、植物蛋白与膳食纤维,且热量低于多数坚果,被美国《Food & Wine》杂志评为2025年度风味食材。

同时,一款融合库纳法(Kunafa)、开心果酱与芝麻酱的迪拜巧克力,经网红玛利亚(Maria Vehera)2023年底在TikTok的短视频推广后风靡全球,进一步带动了开心果的消费热潮。

库纳法外壳使用口感酥脆的细小薄面皮;内馅有阿拉伯奶酪、开心果、杏仁和椰枣等,最后淋上糖浆和撒上坚果。

新加坡市场也赶上潮流,引进和研发开心果食品。开心果和抹茶一样有绿色调,但少了抹茶的苦涩,还带坚果奶油香,制成酱泥后带油脂和顺滑感,和巧克力、冰淇淋、甜点甚至是饮料都可结合。

本土品牌巧克力

SGFR引进过网红一吃爆红的巧克力“Can’t Get Knafeh Of It”,至今仍在售卖。与此同时,商店看到商机,继而推出多款自家品牌的开心果巧克力,如黑巧克力、棉花糖、库纳法和红丝绒,还有开心果抹酱。店家在全岛有多个销售点。

“巧口仙儿”(Chocoelf)将迪拜巧克力原用的牛奶巧克力改为黑巧克力,更符合本地口味。除了开心果口味,还有花生酱、薄荷和焦糖饼干口味。品牌在本地有多个销售点,包括FairPrice Finest。

创意蛋糕和布丁

本地甜点师黄慧娴(Janice Wong)于去年底与迪拜开心果库纳法巧克力原创者诺埃尔(Nouel Catis)合作,推出了一款限量版黑焦糖巧克力,巧妙融合了红枣、茉莉花茶、黑果、咸焦糖、开心果和库纳法,这款甜品的搭配获得本地饕客的热烈反响。 此外,其线上店铺常驻一款班兰开心果蛋糕,层次丰富,融合了椰糖慕斯、班兰椰子奶油、马斯卡彭芝士冻糕(Mascarpone cheese parfait)、咖啡奶酱以及开心果海绵蛋糕。该品牌产品于全岛多处设有销售点。

Pâtisserie CLÉ的两位创始人在2016年于法国研修烘焙时,便注意到开心果是法式与意式甜品中备受青睐的风味。2023年,他们推出了一款全开心果蛋糕,严选纯正的意大利烤开心果,融合了开心果海绵蛋糕、杏仁脆片、甘那许(ganache)及慕斯等多重层次。
自2024年5月起,这款蛋糕销量便广受欢迎至今。TWO BAKE BOYS推出本地“清真”(halal)开心果库纳法香蕉布丁,层次丰富。香蕉蛋奶酱内加入切片香蕉和鲜奶油,再融合酥脆库纳法和香烤开心果碎。

异国风味冰淇淋

2025年5月刚进军新加坡的澳大利亚冰淇淋店“Messina”,开心果和开心果白巧克力(praline)是深受欢迎的口味。

这款冰淇淋选用意大利西西里红皮开心果,经手工去皮去除苦涩与土味,保留果香与自然甘甜。果泥融入杏仁与叶绿素,呈现鲜亮翠绿色,并与醇厚奶香融合,形成风味浓郁、层次丰富的冰淇淋。另一款冰淇淋加入白巧克力、开心果软糖酱和开心果果仁脆糖。

新加坡首家手作豆腐雪糕Tofu G于2026年初在乌节路义安城高岛屋购物中心正式开业。

每份雪糕都采用天然食材,如非转基因大豆,适合素食者,其中一款是开心果口味。

中式点和糖水

传统糕点店“阿嬷传承”(Ah Mah’s Legacy),以自创的开心果麻糍和红龟粿打响名堂。开心果红龟粿的粿皮以日本番薯制成,混合蝶豆花形成好看的翠玉色。整颗开心果磨成粒,加入南瓜籽牛油增添顺滑口感,以及些许海盐提味解腻。

店主十分讲究细节,包括用木质模具和以香蕉叶作为铺垫。撒上开心果海盐的麻糍,也比另外两种口味—花生白芝麻和杏仁黑白芝麻有新意。

开心果价格虽是花生10倍,但可吸引到更多年轻人和新顾客。“阿嬷传承”店面在汤申地铁站附近商场的底层三楼,找到时会有一种“柳暗花明又一村”的喜悦。

甜心点点(Sweet Dots)是2025年开在丹戎巴葛地铁站附近商场的糖水铺,其中一款主打糖水是开心果糊。开心果糊散发坚果香,撒在上面的碎坚果颗粒增添口感和味道。

除了甜心点点,本地许多中式甜品店都有推出开心果糊。西式咖啡馆和新式茶饮店,也陆续将开心果作为创意点子。

Go Nuts for Pistachio

You can now glimpse that telltale shade of pistachio green in chocolates, ice creams, cakes, and even traditional Chinese desserts. Here’s how these nuts have become one of the most popular ingredients in sweet treats.

Pistachios have become a trendy food in recent years, and they happen to be a healthy choice too. These nuts are rich in unsaturated fatty acids, plant protein, and dietary fibres, and are low in calories compared to other nuts.

But their nutritional benefits aren’t the only reasons pistachios have become exceptionally popular. In 2023, influencer Maria Vehera made Dubai chocolate go viral on TikTok. It is inspired by kunafa (sometimes spelt knafeh), a traditional Arab dessert, and its ingredients include shredded phyllo pastry and a vibrant green pistachio-tahini cream.

By 2025, American magazine Food & Wine had declared pistachio the flavour of the year. In April 2025, the price of the nut exceeded US$10 per pound (per 450g) in the global market, a year-on-year increase of
35 per cent.

And demand is still going strong for this versatile ingredient. Here’s how local food businesses are putting their own stamp on the pistachio craze.

Local chocolates

For those seeking the renowned Dubai chocolate experience, SGFR is the destination for the original creation, Can’t Get Knafeh of It, alongside a variety of other local pistachio-infused chocolate concoctions. A different take can be found at Chocoelf, which offers a twist on the Dubai chocolate trend by using dark chocolate as the base instead of traditional milk chocolate.

Creative desserts

Janice Wong offers a unique and complex Black Caramel Chocolate, a collaboration with the creator of the original Dubai chocolate. This inventive confection features a blend of black caramel, red dates, jasmine tea, buah keluak, salted caramel, and kunafa, alongside pistachio. The Gula Melaka Pandan Pistachio Cake is another popular offering. For a dedicated pistachio experience, Pâtisserie CLÉ presents the All Pistachio Cake, a layered creation comprising pistachio sponge, a pistachio almond crunch, pistachio ganache, and pistachio mousse. Meanwhile, Two Bake Boys combines textures and flavours in its Pistachio Kunafa Banana Pudding, which layers creamy banana custard with crunchy pistachios and kunafa.

Ice cream

Gelato enthusiasts can indulge in classic and elevated pistachio flavours at Messina, where popular options include straight pistachio and pistachio praline. A distinctive alternative is available at Tofu G, where the gelato is crafted with a tofu base, and pistachio is among the featured flavours.

Chinese-style treats

Traditional Chinese desserts are reimagined with pistachios at Ah Mah’s Legacy, which offers muah chee generously coated in roasted pistachios and a gu kueh filled with toasted pistachios for added depth. For a simpler pleasure, Sweet Dots serves a pistachio paste renowned for being fragrant, smooth, and not overly sweet, finished with a topping of crushed nuts.
