巴刹里的洋风味
谁说巴刹只能是鱼腥菜味,还有香肠、牛扒与咖啡香……

“巴刹”音译自马来语“Pasar”,就是“菜市场”。许多人爱逛巴刹,不仅因为蔬果、肉禽、海鲜一应俱全,更因那里洋溢着浓浓的人情味。
作为日常生活的一部分,一些年轻居民较多的巴刹也顺应时代变化,引入日式、西式与新式料理食材,并推出小份包装。近来,老社区大巴窑也悄然发生变化,渐渐融入了“洋文化”的气息。
西式咖啡进驻巴刹

大巴窑1巷第127座巴刹,在酿豆腐和冷冻海鲜摊位前的小店,2025年4月传出西式咖啡香。“Luli Roasts”是赵俐莉实践所学的起点。
俐莉曾从事烘焙咖啡长达六年,累积了一定的知识和经验。她创立自家品牌,精选有个性的豆子,小批量现烘现磨。除了网上销售,她租下大巴窑巴刹的单位,售卖传统南洋咖啡豆。小空间经过精心布置,更像一间迷你咖啡馆,常吸引路过的居民好奇多看几眼。
Luli Roasts以批发给咖啡馆为主,也有一些顾客买回家自己享用。选择大巴窑的巴刹是因为地点适中,又靠近地铁站,顾客可以前来试喝和取货。俐莉说:“咖啡豆的喜好因人而异,买一包回家,即使是一两百克,不喜欢又怕浪费,会喝得很勉强。顾客如果来这里,可以先试喝,真的喜欢再买回家。”
从荔枝甜香到坚果余韵

俐莉为咖啡豆取的名字,以及为它们下的注解很有意思。对于温润厚实又伴随荔枝与龙眼甜香的“Deli Dream Blend”,她说,咖啡和面包是餐桌上的梦幻组合,这一款豆子既能与东方早餐,也能与西式早餐完美搭配。
“Hawker Hustle Blend”是她进驻巴刹之后伸出的友谊之手。乌干达豆搭配少量罗布斯塔豆,象征新潮与传统之间的和谐,就像kopi与coffee的相遇。它带有坚果般余韵与焦糖气息,适用于法压壶、摩卡壶,甚至是咖啡袜袋。

巴刹创业的洋屠夫

大巴窑4巷第74座巴刹和熟食中心,有个生肉摊的招牌写着“Outback Butchery”。洋老板亚当(Adam Speering)跟顾客亲切攀谈,充满了人情味。
亚当来自澳大利亚悉尼,2015年随新加坡籍太太落户本地,两人育有五名孩子。因为他的父亲也是屠夫,所以他从小就与生肉打交道,还接受过正规训练并取得专业文凭。初到新加坡时,他在一家肉类加工公司训练员工屠宰技术,后来曾在武吉知马和加东一带开设肉铺。
店面涨租,亚当决定竞标巴刹摊位。2024年底“Outback Butchery”的招牌挂上,成为巴刹一道独特的风景线。

自制香肠和肉饼肉丸
摊位售卖多款适合烹制西餐的牛肉和猪肉,还有多款自制香肠;架势像高档肉铺,但价格亲民。好些肉类和香肠对一些本地人来说相当陌生,亚当会耐心解释。例如西冷(Sirloin)和菲力(Tenderloin)是不同部分,视顾客喜欢哪种口感的牛扒,给予建议。
他也会教顾客如何处理牛肉,煎牛扒经他指点似乎成了轻松活。如果要焖炖,他会将适合部位切成小块,也提供绞肉服务。
新鲜香肠还是在巴刹首见,有牛肉培根香肠、香草蒜味牛肉肠、辣味意大利猪肉肠和爱尔兰香草猪肉肠。香肠使用无麸质米粉作为黏合剂,外皮则是胶原蛋白肠衣。如此保存期更长,但烹煮需要一些技巧,不然可能会漏破,可向亚当讨教一些贴士。另有其他已腌制或调味的肉品,如香草蒜味肉丸和德州风味烧烤猪肋排。

到亚当的网站浏览,产品选择更多,有牛肉、猪肉、羊肉、鸡肉和鱼类等,提供全岛送货服务。不过,亚当更喜欢实体店,可以跟顾客多交流,遇到只会讲华语的顾客,就不得不用“手语”。
他说:“我更喜欢做本地人的生意,洋人流动性强,可能来新加坡住几年就走了。我之前开店时光顾的本地顾客,还会找到这里。”数月前,他已标下隔壁摊位扩充营业。

New sensations in old-school markets

Luli Roasts

By the time she set up this micro roastery, Lily Chow had clocked six years of experience in roasting and blending coffee beans. Luli Roasts curates coffee beans with character, and offers small batches that are freshly roasted and ground. The bulk of the business involves wholesaling coffee blends and single-origin beans to cafes, along with some customers who purchase the coffee for their personal use. In addition to a webstore, Chow decided to rent a stall at Toa Payoh West Market & Food Centre in 2025. The market is centrally located and near an MRT station, which makes it convenient for customers to drop by for collections and tastings. “If they find that they like the taste of the brew, then they can buy the beans on the spot,” she says.
Luli Roasts comes up with creative names for its blends. The Deli Dream Blend has notes of lychee and longan, and goes well with Asian breakfast dishes like fried carrot cake, as well as Western breakfast items such as chocolate croissants. Meanwhile, the Hawker Hustle Blend features Uganda beans with some Robusta beans, and it’s meant to symbolise a meeting of the modern and the traditional, much like coffee and kopi. There are usually two blends brewing at the market stall, where a cup goes for $4 and customers can learn more about the flavours of the blend they pick. Lingering in this café-like stall with a cup of coffee in hand, and soaking up the hustle and bustle – who would have thought that this could be a way to experience the wet market?

Outback Butchery

This butchery at Toa Payoh Vista Market and Food Centre is run by Adam Speering, who is originally from Sydney, Australia. His father is a butcher, so he grew up around the trade. Aspiring to become a butcher himself, he sought out formal training and certification for this craft. After relocating to Singapore in 2015, he trained workers at a meat processing company, then started his own butchery in Bukit Timah and Katong. When rents for those premises rose, he decided to bid on a stall in a wet market. In 2024, Outback Butchery opened in Toa Payoh.
The stall sells cuts of beef and pork suitable for Western cuisine, and Speering is happy to advise customers on the cuts that will work best for their palates and whatever dishes they are hoping to whip up. There are also many kinds of handcrafted sausages, as well as other meat products such as meatballs and Texas-style barbecued pork ribs. The butchery’s website offers even more variety – such as lamb, chicken, and fish – and delivers islandwide. But Speering likes having a physical storefront where he can interact with customers (that can include expressive hand gestures when they don’t speak English). “I like having locals as customers,” he says. “Westerners may only live in Singapore for a few years before moving elsewhere.” He’s already made a successful bid for the adjacent market stall, so his business is all set to expand.
