清真美食的多元风味

新加坡式海鲜、日式的拉面寿司、地中海烧烤,还有米其林厨师精心制作的汉堡包,应有尽有。

“清真”(Halal)认证料理不局限于马来餐。新加坡是个多元种族的国家,加上每年接待许多来自中东和印度尼西亚等世界各地的游客和参与会展的人士,所以本地出现各类持清真认证的餐馆,从中餐、西餐到日本餐都有。

虽然少了猪肉和猪油,但厨师巧妙以其他肉类和食材代替,所以味道毫不逊色,还可以和穆斯林一起大快朵颐。

★The Ramen Stall拉面寿司★

和市区肃街(Short Street)的The Ramen House是姐妹餐馆,不过这家的菜单更全面,而且在“清真界”颇具口碑。拉面汤头以老母鸡、鸡脚和鸡骨熬制,经30多个小时转化成奶白色,再加入蔬菜、大葱、洋葱、玉蜀黍和菇类等让汤头更鲜美。一些拉面口味还蛮有趣的,如不同辣度的火山拉面,以及麻辣和泡菜鸡肉碎。

寿司有海鲜卷、鳗鱼卷和炙烧三文鱼寿司等。烤串有烤鱼子酱虾、烤鸡翅、烤金针菇牛肉卷和烤鸡皮,烧烤有多种鲜类、羊扒和鱿鱼。也有盖饭和咖喱饭。

★Mutiara Seafood新加坡式海鲜★

“Mutiara”在马来文指的是“珍珠”,餐馆是本地知名海鲜餐馆“珍宝集团”今年中推出的新概念,主打新加坡式海鲜。菜单上除了有珍宝海鲜大多数的经典菜品,还添加了烧烤。

招牌辣椒螃蟹自然不能错过,还有咸蛋金沙虾球、马来炒面和脆炸苏东仔等。这家餐馆独有的烧烤菜品,采用古老的开放式炉火将海鲜烤出焦香,同时保留内嫩,推荐金巴兰(Jimbaran,位于峇厘岛)烤虾、叁巴烤尼罗红和印尼烤鸡等

★Burgs米其林厨师汉堡★

2017年成立的本地汉堡品牌,两位创办人曾在米其林餐馆工作,所以肉饼和酱料都可感受到一番心思,面包也是精挑细选。黄色主题招牌特别抢眼,如今已开设五家门店。

明星产品有牛肉芝士汉堡、磨菇牛肉汉堡和牛肉培根芝士汉堡。也有香辣鸡腿和供素食者考虑的天贝(Tempeh)汉堡。粗根薯条是另一大卖点,原味最能尝到薯香,也可选择芝士、辣椒芝士或松露。  

品牌不时会推出促销和限量产品,如可颂(Croissant)质感汉堡面包,以及可自选酱汁和配菜的混搭盒“Smash Box”,和椰浆饭馅料汉堡。

★Penang Place槟城美食★

2003年正式开业至今,想品尝各式各样槟城美食时,不少老饕都会找这家。这里主打道地槟城美食自助餐,也有单点菜单。餐馆很贴心,自助餐托盘内食物的份量不多,不易冷却走味,哪怕会增加工序。

自助餐每天推出30多道菜肴,炒粿条、槟城叻沙、福建虾面汤、牛肉仁当,和甜点浆绿(Chendol)很受欢迎。店家也会介绍一些较少有的,如蒸乌打和咸鱼骨豆腐汤,以及各式娘惹糕点。

★M Hotel点心自助餐★

新加坡有几家有清真认证的点心餐馆,但如果想一次过享用多款点心和一些本地美食,可考虑这家酒店的点心自助餐,每逢星期四至星期日午餐时段供应。

先看看点心,有鸡肉叉烧包、竹炭黄金包、鸡肉烧卖、虾饺、红油抄手、辣椒酱汁配馒头等。另有一些本地美食,如虾酱鸡翅、炒菜头粿、马来炒面、烧鸡饭和粤式鸡脚等。点心有D24榴梿麻糍、班兰叶九层糕和娘惹糕等。

★21 on Rajah地中海和亚洲风味★

在马里士他路新加坡诺维那雅乐轩(Aloft Singapore Novena)酒店内的这家餐馆,2014年取得清真认证,提供结合地中海和亚洲风味的自助餐。

地中海料理以香草和香料入菜,常用橄榄油、洋葱和蒜头等,烹饪过程相对简单,呈现食物原味。顾客最喜欢海鲜和烧烤和甜点,推荐冬炎酱烤鲈鱼、摩洛哥炖羊腿、辣椒螃蟹酱虾婆和慢烤新西兰草食牛肋眼。

何谓清真认证  

Halal是对餐馆及食品的一种认证制度。新加坡有近16%的伊斯兰教徒,推行食品、药品及餐饮业认证制度,方便有需要人士辨识和区别。新加坡的清真认证由新加坡回教理事会(MUIS)发出。

持清真认证的餐饮场所,基本上不能有猪、狗、酒精和可致麻醉物质,动物须在没有生命迹象后才可屠宰。业者在食品来源、处理和加工区、零售店面和储藏空间等各方面,都必须符合条规,餐馆也必须聘请穆斯林员工。回教理事会会突击和定期检查,如违规可被吊销认证或无法更新。

Singapore’s diverse halal food

Halal-certified establishments in Singapore don’t just include those serving Malay cuisine, but also eateries and restaurants offering everything from Western to Japanese menus.

★ Mutiara Seafood ★

Mutiara means “pearl” in Malay, and this is a new concept from the well-known Jumbo Seafood group, whose name in Chinese translates as “pearl treasure”. Don’t miss signature dishes such as chilli crab and prawns with salted egg. The roasted meats and seafood dishes include Jimbaran grilled prawns and grilled red tilapia with sambal.

The dim sum buffet here is available at lunchtime from Thursday to Sunday, and includes chicken char siew pau, charcoal golden sand pau, and chicken siew mai. Also on the menu are local delights such as prawn-paste chicken wings and fried carrot cake. Dessert include D24 durian mochi and pandan kueh lapis.

★ Burgs ★

Launched in 2017 by founders who used to work in Michelin-starred restaurants, this burger chain has a very creative approach. Its star products include the cheeseburger, the mushroom beef burger, the beef bacon burger, and thick-cut fries that come in original, cheese, and chilli cheese versions.

★ The Ramen Stall ★

A sister restaurant of The Ramen House in Short Street, its chicken soup is made with a stock brewed for 30 hours. Try the Volcano ramen, mala ramen and ramen with kimchi and minced chicken, as well as different kinds of sushi, grilled meats, and seafood.

★ Penang Place ★

Since 2003, this restaurant has been serving Penang cuisine in buffets as well as à la carte. The daily buffet features over 30 dishes, including char kway teow, Penang assam laksa, Hokkien prawn noodle soup, beef rendang, and chendol. There are also dishes that are less commonly found elsewhere, such as steamed otah.

The buffet here showcases Mediterranean cuisine, and favourites include the seafood dishes, roasted items, and desserts. Don’t miss the sea bass, Moroccan braised lamb shank, slipper lobster in chilli crab sauce, and roasted New Zealand grass-fed beef rib-eye.
